My favorite vegan meals

I’m consistently asked what are my favorite vegan meals and recipes so I decided to compile a little list with pictures and links. I typically don’t meal plan. When I attempt to do so, we end up never wanting what was on the plan so I prefer to just buy ingredients and make random stuff. These recipes don’t require a lot of effort or ingredients but they are so delicious and filling.

Of all the recipes that I've made, cheese sauce is probably my #1 favorite. It is heaven. I don't understand how and why it's so good but it is! It's versatile too. I use it on tacos, bean burgers, pastas, to bathe in, just everything. lol. You're going to see this cheese sauce used in almost every picture I share today. Sorry, I can't help myself.

I don't have any photos but I love this veggie broth mix and this vegan parmesan and use these often as well. 

Tacos, enchiladas and nachos- I don’t have an actual recipe for these because…. Well, if you have any basic knowledge of cooking you can easily whip these up using your favorite ingredients.

For my enchilada filling I like to use Gardein or Beyond Meat crumbles, zucchini, bell pepper, onion, garlic, black beans and taco seasoning. I put the filling inside tortillas and cover them with store bought enchilada sauce and bake. I like the enchilada sauce and seasoning from Aldi. I use either this mix minus the zucchini or lentils for my tacos. For nachos I add in pintos.

Bean burgers- I've made at least 6 different types of bean burgers but this recipe is fail proof and crazy easy. I come back to this recipe over and over again. It holds together better than any other bean burger recipe I've ever tried.

Fried rice and lo mien- Gardein makes a really delicious Mandarin chicken that I like to use in my fried rice. Though I mostly use chickpeas or tofu in recipes that typically call for meat.

Pasta- Even my picky eater eats all of these meals. Score!

Pot pie- This one takes a bit more time because of the biscuits but it's worth it. Minimalist Baker never disappoints with her recipes.

Bean salad- We LOVE, LOVE, LOVE this recipe. We like to eat it with tortilla chips.

Loaded tots or fries- Sometimes I leave the beef crumbles out of this recipe and it's still good.

Once you've made these meals so many times it becomes easy to make variations to suit the flavors you're craving. For those who've asked, I hope this list is helpful for you. I'm constantly pinning new recipes here if you need more inspiration.
